Vazhakkai Bajji | Plantain Fritters

Ingredients
  

  • 2 Vazhakkai/Raw bananas/Plantains Peeled and sliced
  • 1 cup Gram flour
  • 1 tbsp Rice flour
  • 2 tsp Chili powder
  • salt as required
  • a pinch of Baking soda
  • 2 cups Oil for frying
  • ¾ cup water

Instructions
 

  • Wash and peel Vazhakkai/Raw bananas/Plantains
  • Slice them into thin pieces vertically
  • In a mixing bowl, add gram flour, chili powder, salt, rice flour, baking soda
  • Add water in small amounts to make the batter (not too thick and not too runny). Check the video for the consistency of the batter.
  • Now add a pinch of baking soda to the batter. Give it all a good mix. Make sure there are no lumps
  • Heat oil to a wok/kadai
  • Next dip the sliced vazhakkai/raw banana pieces in the batter, make sure they are evenly coated in batter on both sides, and drop them in hot oil
  • Flip them until they turn golden brown on either side; remove bajjis/fritters from oil and place them bajjis/fritters on paper towel
  • Serve hot with a cup of coffee or chai
